Liemessä, a Finnish food blog, published a recipe called "uunifetapasta" in January 2019. The dish was described without fanfare: a block of feta cheese placed in a baking dish with cherry tomatoes, olive oil, and a few aromatics, roasted until the tomatoes burst and the feta turned golden, then mixed into a sauce and tossed with pasta. The format was perfect for the platform: the visual transformation was dramatic and clear, the active cooking time was nearly zero, the result looked like something from a restaurant. The tomatoes collapsing under heat. The feta, dense and white at the start, softening and spreading into a lush paste when stirred. The pasta tossed directly in the baking dish with a handful of fresh basil. It had six ingredients and took forty minutes of which thirty were oven time. The hashtag #fetapasta reached one billion views. Feta sold out across the United States. Grocery stores rationed it. Food media ran piece after piece attempting to explain the phenomenon — and the explanation, when you read it, is obvious: the recipe delivered restaurant-quality results with beginner-level effort and produced a visually satisfying video in under a minute. The pandemic had sent millions of home cooks searching for exactly this: something impressive, something easy, something that looked like you knew what you were doing. The dish has deep Mediterranean DNA. Feta is a PDO (Protected Designation of Origin) product — legally, only cheese made from sheep's milk (and up to 30% goat's milk) in specific regions of Greece can be called feta. It is salty, dense, tangy, and crumbly when cold but becomes extraordinarily creamy and mild when baked. The Kalamata olives, cherry tomatoes, fresh basil, and olive oil are the pantry of the Mediterranean coast. The recipe assembled familiar ingredients in a novel technique — baking the cheese rather than crumbling it cold — and the result tasted genuinely different from anything most home cooks had made before. It remains one of the simplest and most reliable pasta recipes ever to go viral. The genius is that you cannot overcook it.

  1. 1Preheat to 200°C (fan 180°C / 400°F). Choose a baking dish roughly 30x20cm — large enough to hold the tomatoes in a single layer.
  2. 2Arrange the tomatoes: Pour 3 tablespoons of olive oil into the baking dish. Add the cherry tomatoes, garlic slices, chili flakes, and oregano. Season generously with black pepper (no salt yet — the feta is salty enough). Toss everything to coat in the oil.
  3. 3Place the feta: Create a space in the center of the tomatoes and set the block of feta in it. Drizzle the remaining 2 tablespoons of olive oil directly over the feta. Add any optional additions (olives, honey drizzle).
  4. 4Bake: Place in the oven for 35–40 minutes. The tomatoes should be completely burst and jammy with some caramelized edges. The feta should be golden on top and very soft when pressed with a spoon — it will not fully melt but will become creamy.
  5. 5Cook the pasta: While the feta is baking, cook pasta in heavily salted boiling water (it should taste like the sea) until 2 minutes before al dente. Reserve 1 cup of pasta cooking water before draining.
  6. 6Make the sauce: Remove the baking dish from the oven. Using a fork or the back of a spoon, break up the feta and mash it into the burst tomatoes. It will not be perfectly smooth — some chunks are fine and desirable. Stir everything together into a thick, pink-orange sauce.
  7. 7Combine and finish: Add the drained pasta directly to the baking dish. Toss to coat, adding splashes of pasta water as needed to loosen the sauce — start with 1/4 cup and add more until the consistency coats the pasta without pooling. Tear the fresh basil over the top and fold it in.
  8. 8Serve immediately from the dish it was baked in. Finish with extra olive oil, more black pepper, and lemon zest if using. The pasta is best eaten immediately — it thickens significantly as it sits.
