  1. 1Caramelize onions in oil until deep brown — take your time, this is the flavor base.
  2. 2Add meat and brown on all sides. Add garlic paste, xawaash spice, and tomatoes. Cook 5 minutes.
  3. 3Add water/stock and simmer until meat is tender, about 25 minutes.
  4. 4Drain soaked rice and add to the pot. The liquid should be about 1 inch above the rice.
  5. 5Cover tightly and cook on low heat for 20 minutes without opening. The steam does the work.
  6. 6Fluff with a fork, garnish with fried raisins and cashews. Serve with banana slices and a fresh salad. The banana is not optional.
